Keep St. Patty’s Alive With These Cool Green Drinks

Saint Patrick’s Day may have come and gone, but that doesn’t mean we can’t keep the party rolling into spring with these refreshing virgin cocktails. Guaranteed to put a “spring” in your step! Try them out and let us know what you think!

St. ‘Tricky’s Rickey

Limeade
Club soda
Fresh rosemary sprigs
Rose’s Lime

This Lime Rickey is anything but tricky! Just leave a bunch of sprigs of rosemary in the limeade for a bit beforehand. When ready to serve, take out the sprigs and mix the limeade with club soda (should be about twice as much limeade as soda), then add a splash of Rose’s lime and pour over ice. Use an extra sprig or a wedge of lime for garnish!

The Lucky Cuke*
(makes 1 drink)

4 slices cucumber
3-4 large sprigs mint
1 ounce fresh lime juice
1 ounce simple syrup
4 ounce soda water
*this requires a cocktail shaker, or some kind of strainer at the very least!

A little more labor-intensive but a good way to pulverize a bad mood away, this cocktail will cool off even the hottest Irish temper! Add cucumber and mint to a cocktail shaker. With a muddler stick, press the cucumber and mint to extrude the juices and flavor. (You can use the end of a wooden spoon, just don’t use a blender.) Fill shaker with ice. Measure in the lime and simple syrup. Cap and shake well.

Measure soda water into cocktail shaker, then carefully strain drink into a large glass filled with ice. (Discard the leftover junk in the shaker.) Garnish with a mint sprig or a slice of cucumber.
